Notes
This started as a cider with berry accents. But the berries were just asking for more complexity. The apples remained in place. The berry combo gives it all a nice purple note. I dropped the usual cider spices for the absinthe + elderflower combo. It gives the whole thing a botanical anise top note lift. Brown sugar stayed in; it rounds out the bottom nicely. A touch of cream to help smooth everything together without muting the delicate stuff. Cap SS is the sweetener of choice, just enough to give the fruits a pop.
