My great grandmother used to make her Pistachio Pudding Cake and I used to help her. She made it more so like a poke cake, with holes all into the cake, to pour the pudding and whipped cream on top and stash it in her cooler. She used to host the most fabulous parties and the stories she would tell over eating the PPC.. I miss her dearly so I put together her cake recipe to share here with others. Hope you enjoy it as much as I do. This is a light airy cake with pistachio pudding and whipped cream on top. Steep time is 7 days.. but really you need to give it 14 for the flavors to all come together.
