Cinnamon (Wonder Flavors) 3.5% (4-13-25) – I got three distinct profiles from this one. Baking cinnamon, red hot cinnamon, and an earthy undertone. Upon first testing, it presented as fairly harsh, but it settled down a bit after that. Seemed rather without focus, as it seemed to straddle both a baking cinnamon and a red hot. Perhaps one or the either would be better. 3.5% strength good, with some harshness, and the earthy undertone. 5.5/10.
